BEEF NILAGA of Filipino Beef soup is a classic and popular Filipino dish that's a staple in many Filipino households. The word "Nilaga" means "to boil" in English. It’s consists of soft and tender chunks of beef in a light, clear yet savory broth with vegetables like potatoes, cabbage and bokchoy. Hearty, comforting, so good and easy to make. And as always, enjoy with steamed white rice and spicy fish sauce for dipping!

Instructions
Add beef (3 lb) to a large soup pot.
Add enough water to submerge the meat completely.
Cover, turn the heat to high, and bring to a boil.
Discard the water.
Using the same pot, add beef back in the pan and add water (7-8 cups), onion and salt. Cover. Bring to boil then reduce to low and simmer for 1.5 to 2 hours until meat is tender.
Add large chunks of potatoes (1 large) and fish sauce (1 Tbsp) and stir.
Cover continue to cook until potatoes are tender
Add wedges of cabbage (1) and bokchoy (2 bunches). Cover and cook for another 5 minutes.
Serve with steamed white rice and a side of fish sauce with calamansi or lime juice.
