Instructions
Preheat a large wok, add 2 tbsp cooking oil (4 Tbsp), and add potatoes (2 medium) and carrots (1 medium) over high heat. Season with salt (½ tsp) and pepper (½ tsp). Sauté for 5 minutes. Add bell peppers (1 large) and saute. Cook until veggies are tender or 70% cooked. Transfer to a plate. Set aside.
In the same wok, add cooking oil (4 Tbsp) and saute onions (½ small) and garlic (6 cloves) over high heat until fragrant.
Add beef (2 ½–3 lb) and season with soy sauce (2 Tbsp), salt (½ tsp), and black pepper (½ tsp). Saute until meat is coated in soy sauce. Continue to cook until the liquid is reduced. (saute often to prevent from burning) This may take about 15-20 minutes.
Add boiling hot water (4–5 cups). Stir. Cover. Reduce heat to low and let the beef tenderize. It may take 1 to 1.5 hours.
Add tomato sauce (1 can), liver spread (1 can), sugar (2 Tbsp), dried bay leaves (3 leaves), and cheese (⅔ cup). Stir until the cheese and liver spread dissolves in the sauce.
Continue to cook uncovered on low heat until the sauce reduces and becomes a lot thicker.
Add veggies (2 medium), stir, and continue to finish cooking in the sauce.
Taste the sauce if it needs salt (to taste) or fish sauce (to taste).
Serve over steamed white rice and enjoy!
